Abstract

Peanut (Arachis hypogaea L.) is widely consumed worldwide, due to its nutritional properties and pleasant taste, besides being consumed in nature or in products derived from it. When germinated the peanut presents an improvement in its chemical composition, which results in better benefits to human health. In this way the present work aimed to evaluate the research results related to the applications of peanuts and peanuts germinated in food technology through patent applications. The World Intellectual Property Organization (WIPO) database was used, using the PATENTSCOPE database that provides access to the PCT requests. It has been observed that peanuts and their potential are widely exploited worldwide, in contrast to their germination has not been explored in the food area. China as a rising world power is leading patent filings over peanuts.
