Gastronomy is an integral part of a nation's culture and identity and contributes to its credibility and prestige on an international level. In a context of expanding opportunities for international mobility and the desire to get in touch with local cultures through food, a culinary cosmopolitanism is flourishing capable of giving visibility to the gastronomy of non-central countries. This openness to gastronomic alterity has strengthened the notion of gastrodiplomacy among governments in recent years. A component of cultural diplomacy and public diplomacy, it has been used as a government strategy for recognition and insertion in the international scene. However, the subject remains little studied in Brazil. This article proposes to shed light on the growing interest in cuisines from around the world and the cultural policies supporting national gastronomy abroad, thus dealing with the issue of food from the perspective of international relations.
